Yield 10 burgers
- 4 Tablespoons Smart Balance Oil
- 3 cups chopped or shredded, fresh or frozen, uncooked scallops or use your favorite fish or shrimp to make the burgers.
- 1 ½ cups bread crumbs
- 1 Tablespoon diced butter
- 1 Tablespoon lemon
Season to taste with: parsley, dill, onion powder, garlic powder, paprika, savory, chili powder, cayenne pepper, black pepper & salt.
Combine all ingredients (not the oil) in a large bowl, and form burger patties (2 tablespoons each). Place patties in the refrigerator, on a non stick tray until ready to cook. Heat oil over medium-high heat; fry burgers a few minutes on each side, until golden brown. Serve over greens or on a bun. The sauce in the photo is 1 Tablespoon mayonnaise, 1 teaspoon mustard & 1 teaspoon honey (combined); it will be enough to drizzle on 2 burgers.
