Rainy Day Turkey Sausage Spaghetti with Peppers and Onions

Serves 2


1 Tablespoon Smart Balance
Oil 1/2 white onion chopped
2 garlic cloves minced
¼ bell pepper chopped (any color or multiple)
Pinch fennel seeds
Pinch crushed red pepper flakes
¼ teaspoon oregano
¼ teaspoon thyme
Salt and black pepper to taste
¼ lb ground turkey
14.5 ounce canned, diced, no salt tomatoes


Preheat a large, oil coated skillet to medium-high heat. Saute the vegetables and seasonings until tender. Add pinches of ground turkey; continue cooking while stirring, until the turkey turns white and vegetables are browned.  Add tomatoes (don’t drain). As soon as the sauce begins to boil, stir and reduce heat to low for a few minutes. Serve over pasta. Garlic Toast; Spread Smart balance spread, and garlic powder on bread then toast in oven.
