Alaskan Jumbo Cod Fillet with Cornflake Crumbs

An exceptionally yummy fish that is not too fishy :)



This fillet was about 3" wide by 8'' long by 1.25'' thick in some areas.
Dip fish in a scrambled egg, then cornflake crumbs
(the cornflake crumbs can be found where you purchase regular bread crumbs.)
Coat a pan with oil; add a touch of salt while cooking.
Fry 3 min on each side until golden brown; cover, cook 5 more minutes.
This will be flaky and moist, not too crispy; you want crispy? Don't cover it!
Cook the leftover egg afterwards or discard it.
