This fillet was frozen and thawed in the refrigerator, the day before; measuring about 3" wide by 8'' long by 1.25'' thick in some areas.Rinse fish and pat dry before cooking. Coat a large skillet, with Smart Balance oil and a Tablespoon of butter or Smart Balance Spread and preheat to medium-high. Season the fish to taste with salt, black pepper, minced garlic and summer savory; fry until golden brown and fish turns white, about 3 minutes per side. After you turn the fish, add some tomato pieces and green onions, then squeeze lemon juice over cooked fish and serve with pan drippings. This fish was served with creamed spinach. Cook spinach, drain and add salt, black pepper, onion powder to taste; cream in a teaspoon of spread or butter and couple teaspoons of sour cream. Easy to cook and it taste good.
