Vegetable, Bean, Pineapple & Rice, Topped With Avocado

Serves 2

  • 8 sliced white mushrooms
  • 4 Tablespoons white onion
  • 2 chopped green onion (scallions)
  • 1/4 cup orange bell pepper
  • 1 Clove garlic
  • 1/3 cup drained low sodium, canned black beans
  • 1 chopped pineapple ring
  • 1 small! squirt ketchup (and, in place of salt)
  • few chopped Spanish olives with pimentos

Coat a large skillet with Smart Balance Oil; preheat to a medium high heat. Saute the first 5 ingredients until soften and aromatic; add black beans and pineapple, toss well with ketchup and continue cooking until all ingredients are hot. I served this over rice and topped it with avocado slices; I did not use any other seasonings, only what I normally add to the rice.
