Roasted Honey Mustard Chicken For Two


Serves 2



  • 1 Tablespoon spicy mustard
  • 1 Tablespoon clover honey
  • ¼ teaspoon garlic powder 
  • A dash of sea salt, and black pepper to taste  
  • 2 chicken thighs with skin removed 

Preheat oven to 350 (I use a small GE Convection Oven- love it!) In a medium bowl, mix the first 5 ingredients with a fork until incorporated, then roll chicken in sauce until thoroughly covered. Prepare a foil lined baking or roasting pan with a non-stick spray or smear butter to thinly coat. Place chicken pieces right side up for browning. Do not cover! Roast for 25 minutes then turn oven up to broil for 10 more minutes and it's  done:)  If you plan to BBQ, double the sauce for basting, and as usual, ovens may vary.
